Indian Style Brinjal Curry

Ingredients
  Brinjal 6 , chopped, keep inside water
  Methi leaves 1 Cup (16 tbs), washed and finely chopped
  Oil 1 Tablespoon (For Seasoning:-)
  Mustard seeds 1 Teaspoon (For Seasoning:-)
  Onion 1 1⁄2 , finely chopped (For Seasoning:-)
  Ginger paste 1 Teaspoon (For Seasoning:-)
  Garlic paste 1 Teaspoon (For Seasoning:-)
  Tomato 1 , finely chopped (For Seasoning:-)
  Coconut 4 Teaspoon (For Grinding:-)
  Coriander leaves 1 Tablespoon (For Grinding:-)
  Onion 1 (For Grinding:-)
  Tomato 1 (For Grinding:-)
  Roasted gram 1⁄2 Tablespoon (For Grinding:-)
  Sambar powder 2 Teaspoon (For Grinding:-)
  Water 1 Tablespoon (adjust the quantity of water as required for grinding to smooth paste)
Directions

In a pan add oil when it is hot add mustard seeds,allow to pop up
Now add curry leaves, onion and fry till golden brown.
Now add methi leaves and fry till they become soft.
Add ginger and garlic paste,brinjal and fry till they are cooked.
Now add tomato and allow them to become mashy.
Add grinded masala,salt water little and allow bublles to come.
Taste it and adjust the salt.
Finally when it is ready,transfer to a serving bowl.
Ready to eat with hot rice,chappati...........
