Mutton Red Curry

  Mutton 1 Kilogram
  Chili powder 2 Teaspoon
  Coriander powder 1 Teaspoon
  Mustard seeds 1 Teaspoon
  Fenugreek seeds 1⁄4 Teaspoon
  Cumin seeds 1⁄2 Teaspoon
  Ginger 1 Teaspoon, sliced
  Garlic 1 Clove (5 gm)
  Vinegar 1 1⁄2 Teaspoon
  Refined oil 1⁄2 Cup (8 tbs)
  Onion 2 Cup (32 tbs), finley sliced
  Ripe tomatoes 250 Gram, finely chopped
  Salt To Taste
  Hot water 3 Cup (48 tbs)

1. Wash and clean the mutton. Cut into medium-size pieces.
2. Grind items 2 to 8 with vinegar into a paste.
3. Heat oil, saute sliced onions and add chopped tomatoes. Fry well and add the ground paste.
4. Fry on low flame till the oil rises to the surface. Add the meat pieces and salt. Mix well.
5. Add 3 cups hot water to cook the meat.
6. Cover the vessel with a deep lid containing boiling water. This will help the meat to cook well.
7. Keep on low heat and simmer until the gravy starts thickening.
8. Once the meat is cooked, remove from fire and serve warm.
