Ingredients
  Jerusalem artichokes 1 Pound, trimmed and sliced 1/4 inch thick
  Reconstituted natural butter flavored mix 1⁄4 Cup (4 tbs)
  Red wine vinegar 2 Teaspoon
  Snipped fresh parsley 1 Tablespoon
  Dry mustard 1⁄2 Teaspoon
  Grated lemon peel 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Unsalted sunflower nuts 1 Tablespoon
Directions

In 2-quart casserole, combine all ingredients, except nuts.
Mix well.
Cover.
Microwave at High for 8 to 12 minutes, or until tender, stirring after half the time.
Sprinkle with sunflower nuts.
