Hot Curry & Cheese Muffins

Ingredients
  Scallions 6 Medium, thinly sliced
  Shredded sharp cheddar cheese 1 1⁄2 Cup (24 tbs)
  Eggless mayonnaise 1⁄2 Cup (8 tbs)
  Chopped black olives 1 Cup (16 tbs)
  Curry powder 2 Teaspoon
  English muffins 6 , halved and toasted
Directions

Combine first five ingredients. Spread generously on toasted muffin halves.
Place under a preheated broiler just until cheese melts. Watch closely. Serve while hot.
