Hot Curry Sauce
|Zucchini||6 , peeled and chopped|
|Vegetable oil||2 Teaspoon (Polyunsaturated Oil)|
|Onion||1 , chopped|
|Curry powder||1 Teaspoon|
|Chili sauce||1⁄2 Teaspoon|
1.Boil, steam or microwave zucchini.
Drain and set aside to cool.
2.Heat oil in a non-stick trypan.
Add onion and curry powder and cook for 4-5 minutes or until onion softens.
3.Place zucchini, onion mixture, chilli sauce and chutney in a food processor or blender and process until smooth.
Pour into a saucepan and cook over low heat until sauce heats through.
