Turkey Curry

Ingredients
  Quick cooking rice 1 1⁄2 Cup (24 tbs)
  Apple 1 Medium, cored and cut into thin wedges to make about 1 1/2 cups
  Onion 1 Medium, chopped to make 1/2 cup
  Curry powder 2 1⁄2 Teaspoon
  Bottled minced garlic/1/8 teaspoon garlic powder 1⁄2 Teaspoon
  Ground cinnamon 1⁄8 Teaspoon
  All purpose flour 1 Tablespoon
  Plain low-fat yogurt 8 Ounce (1 Carton)
  Fully cooked turkey breast portion 8 Ounce, chopped to make about 2 cups
  Chicken broth 1⁄2 Cup (8 tbs)
  Raisins 1⁄4 Cup (4 tbs)
  Chopped dry roasted peanuts 2 Tablespoon
Directions

Cook rice according to package directions.
Set aside.
Meanwhile, in a medium saucepan cook apple, onion, curry powder, garlic, cinnamon, and 1/4 teaspoon salt in 2 tablespoons water till onion is tender.
Remove saucepan from heat.
Stir flour into yogurt, then stir into onion mixture.
Stir in turkey, chicken broth, and raisins.
Cook and stir over medium heat till thickened and bubbly, then cook and stir 1 minute more.
Serve over hot cooked rice.
Sprinkle with peanuts.
