Mild Curry Powder's picture
  Coriander seeds 3⁄4 Cup (12 tbs)
  Chili pepper 2 1⁄2 Tablespoon (dried)
  Poppy seeds 1 Tablespoon
  Cumin seed 1 Tablespoon
  Mustard seeds 1 Tablespoon
  Saffron 2 Tablespoon
  Turmeric 2 Teaspoon
  Salt 2 Tablespoon
  Garlic powder 1 Teaspoon
For spicy paste
  Clarified butter/Oil 1⁄4 Cup (4 tbs)
  Finely chopped onions 1⁄4 Cup (4 tbs)
  Crushed garlic 2 Clove (10 gm)
  Curry powder 3 Teaspoon
  Ground ginger 1⁄2 Teaspoon
  Dry mustard 1⁄2 Teaspoon

Pound and rub seeds and chili peppers to fine powder.
Add saffron, turmeric, salt and garlic powder.
Mix thoroughly.
Bottle, and cork tightly.
SPICY PASTE: (for curried dishes) heat 1/4 cup oil or clarified butter and add 1/4 cup finely chopped onion, 1 or 2 crushed cloves garlic, 3 teaspoons curry powder and 1/2 teaspoon each ground ginger and dry mustard.
Stir and simmer 1 or 2 minutes on low heat.
