Pork Curry With Apples And Cream

  Vegetable oil 3 Tablespoon
  Yellow onions 2 Medium, peeled and chopped
  Garlic 2 Clove (10 gm), peeled and minced
  Celery stalks 2 , diced
  Lean ground pork 1 Pound
  Apple juice 1 Cup (16 tbs)
  Curry powder 2 Teaspoon
  Salt 1 Teaspoon
  Ground ginger 1⁄4 Teaspoon
  Ground cumin 1 Teaspoon
  Tart red apple 1 Medium, cored and diced
  Raisins 1⁄2 Cup (8 tbs)
  Sour cream 1 Cup (16 tbs)

1. Heat the oil in a heavy 12-inch skillet over moderate heat. Add the onions, garlic, and celery, and cook, uncovered, for 5 minutes. Raise the heat to moderately high, add the pork, and cook, stirring, for 5 minutes, or until no pink remains.
2. Add the apple juice, curry powder, salt, ginger, cumin, apple, and raisins. Stir, then reduce the heat and simmer, uncovered, for 5 to 8 minutes, or until most of the apple juice has evaporated but the mixture is not yet dry.
3. Remove the skillet from the heat and stir in the sour cream. Return to the heat just long enough to heat through. Do not let the mixture boil or the sour cream will curdle. Serve with rice and a cucumber salad.
