Carrot Curry

very quick and easy to make carrot curry
  Carrots 4 Large
  Shredded coconut 3 Tablespoon (fresh)
  Green chilli 2 , slit
  Mustard seeds 1⁄2 Teaspoon
  Urad dal 1⁄2 Teaspoon
  Curry leaves 3
  Oil 2 Teaspoon
  Salt 1⁄4 Teaspoon

* Peel and grate the carrots.

* In a pan pour oil put mustard, urud dal and curry leaves, 2 slit green chillies, put the grated carrots and keep the flame in medium, add salt and cover with lid and cook till carrot is well cooked.

* Add 3 tsp of grated coconut and mix once and remove from fire.

* The carrot poriyal is ready

Carrots are so healthy and this sounds terrific. Do you or anyone know the recipe for the minced carrot "dip" or pickle? I don't know the name as I have only have eaten it from our Farmer's Market and love it, but it is expensive as a small container less than 6 ounces is $5 or $6 I only bought it once as it is too expensive! I have asked the name and the woman just smiles. Shanti/Mary-Anne

Hi Shantihh... I think you are talking about carrot pickle... honestly I dont know how to prepare it, but this is available is all Indian gocery stores, maybe you can try that.

yes this is a typical south indian dish, especially in tamil nadu.
