Beef And Pineapple Curry

Ingredients
  Braising beef 1 Pound, cut into 1 inch cubes
  Onion 1 Large, chopped
  Oil 2 Tablespoon
  Curry powder 2 Tablespoon
  Beef stock 3⁄4 Pint
  Natural yogurt 1⁄4 Pint (Unflavored)
  Canned pineapple chunks 7 1⁄2 Ounce, drained (1 Small Can)
  Long grain rice 8 Ounce
  Desiccated coconut 2 Tablespoon (To Garnish)
Directions

Fry the meat and onion in the oil until the meat is brown and the onion is tender.
Stir in the curry powder and cook for a further 2 minutes.
Blend in the stock and yogurt, cover and simmer for 45-50 minutes.
Add the pineapple and simmer for a further 15 minutes.
Cook the rice in 1 pint (1/2 cups) boiling" salted water until just tender and the liquid is absorbed.
Dry it off in a moderate oven, 325°F, Gas Mark 3, if wished
