Coconut N Curry Chicken
|Crushed bran flakes||1⁄2 Cup (8 tbs)|
|Shredded coconut||1⁄4 Cup (4 tbs)|
|Curry powder||1 Teaspoon|
|Whole chicken breasts/2 chicken drumsticks with thighs||2 Small, halved lengthwise|
|Butter||2 Tablespoon, melted|
Combine bran flakes, coconut, curry powder, and salt.
Brush chicken with melted butter, then roll in bran flake mixture.
Place chicken, skin side up, in ungreased shallow baking pan.
Bake at 375° till tender, 40 to 45 minutes.
Do not turn.
