Chicken Tofu Curry Stir Fried Dish
Ingredients
  Flour 1⁄4 Cup (4 tbs)
  Curry powder 4 Teaspoon
  Sugar/2 package splenda 2 Teaspoon
  Salt 1 Teaspoon
  Ginger 1⁄4 Teaspoon
  White pepper 1⁄8 Teaspoon
  Cayenne pepper 1 Teaspoon (To Taste)
  Onion 1 Medium, chopped (1/3 Cup)
  Celery stalks 4 , finely chopped
  Carrot sticks 2 , shredded
  Green onions 1 Bunch (100 gm), chopped
  Green bell pepper 1 , chopped
  Red bell pepper 1 , chopped
  Yellow bell pepper 1 , chopped
  Orange bell pepper 1 , chopped
  Mushrooms 1 Cup (16 tbs), sliced
  Red onion 1⁄3 Cup (5.33 tbs), chopped (1 Medium)
  Butter/Olive oil 4 Tablespoon
  Garlic/1/2 teaspoon dried minced garlic 2 Clove (10 gm), minced
  Milk/Coconut milk/ 1 cup of powdered milk and 2 cups of cold water works great 2 Cup (32 tbs)
  Lemon juice 2 Teaspoon
  Fried tofu cubed 8 Ounce
  Cooked cubed chicken 1 1⁄2 Cup (24 tbs) (Note: Thighs Give A Richer Flavor)
Directions

Sauté Garlic in butter or olive oil over low-med heat until toasted and fragrant add Vegetable Mixture stirring constantly until onions are clear. Add Flour Mixture, milk, tofu, and chicken to Vegetable Mixture stirring constantly over med heat until mixture thickens. Remove from heat and add lemon juice. Makes 6-8 servings. Serve over 1-cup cooked rice, 1 package ramen noodles, or 1 serving soba noodles.
