Potato Bell Pepper Curry

This Indian style curry is made with potatoes and bellpeppers. It is very easy, very quick and very tasty.
  Potatoes 3 , peeled and cubed
  Red onion 1 , finely chopped
  Tomatoes 1 1⁄2 , finely chopped
  Bell pepper 1 , diced
  Red chili powder 1⁄2 Teaspoon
  Turmeric powder 1⁄2 Teaspoon
  Cumin seeds 1 Teaspoon
  Cumin powder 1 Teaspoon
  Coriander powder 1 1⁄2 Teaspoon
  Dried mango powder 1 Teaspoon (Aamchur Powder)
  Salt To Taste
  Garam masala powder 1 Teaspoon
  Oil 2 Teaspoon

Pour oil in heated pan and add cumin seeds to sizzle. Next add onions and sprinkle salt to speed up cooking. Fry the onions in high heat till they turn brown. Add the tomatoes and fry for 3-4 mins to blend with the onions. Next add the seasonings like red chili powder, coriander powder, cumin powder, aamchur powder and turmeric powder. Blend the spices nicely with the onions and tomatoes. Add the potatoes and mix well. Add a glass of hot water and cover with a lid. Cook till the potatoes are tender. Finally add the bellpepper and mix well with the potatoes. Cook for 3-4 mins with cover, but be careful not to overcook the bellpeppers. Remove from heat and sprinkle garam masala powder on top.

Serve with Indian parantha or pita bread.
