Apple Curry Chicken
|Whole chicken breasts||2 , split, skinned and boned|
|Apple juice||1 Cup (16 tbs), divided|
|Plain croutons||1 1⁄2 Cup (24 tbs)|
|Apple||1 Medium, chopped|
|Finely chopped onion||1⁄2 Cup (8 tbs)|
|Raisins||1⁄4 Cup (4 tbs)|
|Brown sugar||2 Teaspoon|
|Curry powder||1 Teaspoon|
|Poultry seasoning||3⁄4 Teaspoon|
|Garlic powder||1⁄8 Teaspoon|
Preheat oven to 350°F.
Lightly grease shallow baking dish.
Arrange chicken breasts in a single layer in prepared pan.
Combine 1/4 cup of the apple juice, the salt and pepper in small bowl.
Brush all of the mixture over chicken.
Combine croutons, apple, onion, raisins, sugar, curry powder, poultry seasoning and garlic powder in large bowl.
Stir in remaining 3/4 cup apple juice; spread over chicken.
Cover; bake about 45 minutes or until chicken is tender.
Garnish as desired.
