Classic Chicken Curry With Winter Fruit And Walnuts

Ingredients
  Butter 1⁄4 Cup (4 tbs)
  Garlic 2 Clove (10 gm), minced
  Curry powder 1 Tablespoon
  Paprika 1 Teaspoon
  Ground red pepper 1⁄4 Teaspoon
  Cornstarch 1 Tablespoon
  Chicken broth 1 Cup (16 tbs)
  Chicken breast halves 6 , skinned and boned
  Pears 2 , cored and thickly sliced
  Walnuts 3⁄4 Cup (12 tbs), chopped
  Chopped green onions 1⁄2 Cup (8 tbs)
  Cranberries/Currants 1⁄4 Cup (4 tbs)
Directions

Microwave butter in uncovered 3-quart glass casserole dish 2 minutes at HIGH (100% power).
Stir in garlic and spices; microwave 3 minutes.
Mix cornstarch with broth and add to garlic mixture; stir.
Arrange chicken breast halves in single layer in sauce with thickest pieces toward side of dish.
Cover and microwave 6 to 8 minutes, rotating chicken pieces every 2 minutes.
Stir in remaining ingredients.
Cover and microwave 6 to 8 minutes or until chicken is cooked through.
Arrange chicken and pears on serving platter.
Pour remaining sauce over chicken; serve with rice or couscous, if desired.
