Sea Island Curry Sauce
|Coconut||125 Milliliter, grated (About 1/2 Cup)|
|Milk||250 Milliliter (About 1 Cup)|
|Butter||60 Milliliter (About 4 Tablespoon)|
|Onions||2 , chopped fine|
|Unpeeled apple||1 , cored|
|Tomatoes||2 Small, peeled and seeded|
|Curry powder||15 Milliliter (About 1 Tablespoon)|
|White wine||250 Milliliter (About 1 Cup)|
€¢ Place the coconut and milk in a bowl. Soak 30 minutes.
€¢ Place the butter in a microwave-safe bowl and melt 3 minutes at HIGH.
€¢ Add the onions, stir and microwave 4 minutes at HIGH.
€¢ Stir, add the apple, tomatoes, curry powder and salt to taste. Stir thoroughly.
€¢ Microwave 5 minutes at MEDIUM-HIGH.
€¢ Stir, add the coconut and milk and the white wine.
€¢ Mix and microwave 3 minutes at HIGH.
€¢ Puree in a food mill or food processor.
€¢ Adjust seasoning.
€¢ Warm 3 minutes at HIGH.
