Shrimp & Mushroom Curry

It is a very tasty & colourful dish. Quick fix when you have unexpected guests.
  White mushroom 1 Pound
  Cleaned shrimp 1 Pound, cleaned
  Onion 1 Medium, made
  Tomato 1 Medium, chopped
  Turmeric powder 1 Teaspoon
  Oil 3 Tablespoon
  Cumin powder 1 Tablespoon
  Garlic clove/1 tbsp garlic powder 2 Large
  Paprika powder 1 Teaspoon
  Salt To Taste
  Coriander/ cilantro 4 , chopped

1. In a skillet heat the oil
2. Add onion paste and chopped tomatos - cover & let it simmer for 5 mins
3. Remove cover & put the flame on high
4. When paste is dry & brown in colour, add the spices including garlic & green chillies- saute for a couple of minutes
5. Add shrimp & sliced mushrooms & salt
6. Mix well & cover & keep it in medium flame for 5-7 mins
7. Remove cover, a lot of water will come out from the mushrooms & shrimp - put the flame on high & dry up the water
8. Remove when the gravy is thick
9. Garnish with Cilantro and serve hot with steamed rice

This is a wonderful dish that could surely be classified as indian comfort food at its best-- simple, flavorful, healthy yet rich tasting. I added 1/2 tsp of curry as I happened to have a very good one in my pantry and couldn't resist. My 9 year old daughter (who loves Indian food) also gave it a thumbs up. I left out the heat this time (with her in mind) but will surely add it the next time around.
