Soy Bean Curry
|Celery||1 Cup (16 tbs), diced|
|Garlic||1 Clove (5 gm), minced|
|Onion||1 , chopped fine|
|Carrot||1⁄2 Cup (8 tbs), diced|
|Green pepper||3⁄4 Cup (12 tbs), diced|
|Cooked soybeans||3 Cup (48 tbs)|
|Soybean cooking liquid||1 1⁄2 Cup (24 tbs)|
|Curry powder||1 1⁄2 Teaspoon|
In a large skillet, saute celery, garlic, onion, carrot and green pepper in oil, until lightly brown and tender.
Add soybeans, soybean water and curry powder.
Transfer to a casserole and bake in a preheated oven until liquid is absorbed 1/2 to 1 hour.
