|Ghee||40 Gram (2 - 3 Tablespoons Oil)|
|Onion||1 Small, chopped|
|Diced mixed vegetables||450 Gram|
|Chili powder||1 Teaspoon|
|Ground coriander||2 Teaspoon|
|Tomatoes||3 , skinned and chopped|
Heat the ghee or oil in a pan and gently fry the onion until light brown.
Add the diced vegetables and stir in the chilli powder, coriander, turmeric and salt to taste.
Fry for 2-3 minutes.
Add the tomatoes, stir well and add 1-2 tblspn water, then cover and cook gently for 10-12 minutes until the mixture is dry.
