Blackcurrant Whip

Ingredients
  Unsweetened black currants 1 Pound, frozen
  Water 1 Cup (16 tbs)
  Sugar 4 Ounce
  Powdered gelatin 1⁄2 Ounce
  Evaporated milk 1⁄4 Pint, chilled
  Egg 1 , separated
  Whipped cream 1⁄4 Cup (4 tbs) (For Decoration)
Directions

MAKING
1. Take a saucepan and add water, sugar and blackcurrants to it
2. Heat till the sugar dissolves, cover and let it simmer for twenty minutes, after which it must be allowed to cool
3. Sieve it or puree it in an eletcric blender
4. In a small basin add a quarter pint water and sprinkle gelatin over it
5. Let it stand in a pan with hot water and dissolve the gelatin
6. Add it to the fruit puree, stirring constantly
7. In a bowl, whisk evapourated milk until thick and frothy
8. Fold a stiffly whisked egg white into the mixture
9. Fold into a glass serving dish and allow to set

SERVING
10. Unmold and Top with whipped cream before serving
