Currant And Semolina Desserts

Ingredients
  Milk 4 1⁄3 Cup (69.33 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Grated lemon rind 1⁄2 Teaspoon (Of 1/2 Lemon)
  Vanilla extract 1⁄2 Teaspoon
  Semolina 1 1⁄2 Cup (24 tbs)
  Ground almonds 1⁄2 Cup (8 tbs)
  Currants 1⁄2 Cup (8 tbs)
  Eggs 2
  Canned peach slices 7 1⁄2 Ounce (1 Can)
  Canned cherries 7 1⁄2 Ounce (1 Can)
Directions

MAKING
1. In a saucepan, bring the milk to a boil, add grated lemon rind, semolina, sugar and vanilla extract and allow to simmer till thick
2. Turn the heat off, add ground almonds and currants and stir; add in the eggs and mix them well
3. Into four dampened soup bowls, pour the semolina mixture, smooth the top and chill for a couple of hours
4. Drain peaches and cherries and reserve the juice

SERVING
5. Turn the semolina dessert into individual plates, spoon some of the reserved juice and decorate with peach and cherry slices
