Red Currant Cobbler
|Granulated sugar||3⁄4 Cup (12 tbs)|
|Firmly packed light brown sugar||3⁄4 Cup (12 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs), cut into small pieces|
|Red currants||1 Quart, washed and stemmed|
|Sifted all purpose flour||1 Cup (16 tbs)|
|Baking powder||2 Teaspoon|
|Light cream/Milk||2⁄3 Cup (10.67 tbs)|
Combine granulated sugar, brown sugar, butter, and red currants.
Put in greased 2-quart baking dish.
Sift together flour and baking powder.
Beat in egg and cream.
Sprinkle over currant mixture.
Bake in preheated hot oven (400°F.) for about 35 minutes, or until top is crisp.
Serve warm, with heavy cream if desired.
