Sugar Patties Or Cup Cakes

Sugar patties or cup cakes are buttermilk and sugar cupcakes or muffins. Baked in muffin tins with a batter of sugar, flour, egg and buttermilk, the sugar patties or cup cakes can be baked wih added cocoa too.
Ingredients
  Sugar 1 Cup (16 tbs)
  Sifted all purpose flour 1 3⁄4 Cup (28 tbs)
  Salt 1⁄4 Teaspoon
  Baking powder 2 Teaspoon
  Egg 1
  Buttermilk 1⁄2 Cup (8 tbs) (adjust quantity as needed)
  Soda 1⁄2 Teaspoon
  Soft butter 1⁄4 Cup (4 tbs)
Directions

Sift sugar, flour, salt and baking powder together.
Break egg into a cup and fill with buttermilk, adding soda.
Pour this mixture into dry ingredients and add butter.
Mix well.
Bake in greased muffin tins at 350F 25 minutes.
Note: For a change mix 2 tablespoons cocoa in enough water to make a paste, add this to the above mixture and you have chocolate cupcakes.
