Red Velvet Cupcakes with Cream Cheese Frosting
|For the cupcakes:|
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Cocoa powder||2 Tablespoon|
|Unsalted butter||1⁄2 Cup (8 tbs) (At room temperature)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Buttermilk||1 Cup (16 tbs)|
|White vinegar||1 Teaspoon|
|Baking soda||1 Teaspoon|
|Red food coloring||1 Ounce|
|For the cream cheese frosting:|
|Cream cheese||8 Ounce (At room temperature)|
|Powdered sugar||1 1⁄2 Cup (24 tbs)|
|Sprinkles||1⁄2 Cup (8 tbs) (For decoration) (Optional)|
1)Preheat oven to 350 degrees.
The red cupcakes:
2)Take a muffin pan and spray it with non-stick cooking spray or line with baking cups.
3)In a bowl, mix together flour, salt and cocoa powder. Set aside.
4)In a mixing bowl, add unsalted butter and sugar.
5)Beat until light and fluffy. Then add eggs, vanilla and water. Mix together well.
6)Then pour in half of the flour mixture and mix. Then add half of the buttermilk and mix.
7)Repeat the process and pour in remaining flour mixture and mix. Add remaining buttermilk and mix.
8)In a small bowl, stir together white vinegar and baking soda. Using a spoon, fold this into the batter.
9)Fold in red food coloring until it reaches the shade of red you prefer.
10)Spoon batter into the baking cups and bake in the oven for 15 - 20 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and let cool completely.
11)To make the frosting, in a mixing bowl, add together cream cheese, butter, powdered sugar and vanilla.
12)Beat until it is smooth and creamy.
13)Once cupcakes are cool, frost them and decorate however you like.
