Surprise Chocolate Cupcakes
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|All purpose flour||2 Cup (32 tbs)|
|Baking soda||1 Teaspoon|
|Milk||1 Cup (16 tbs)|
|Eggs||3 , beaten|
|Unsweetened chocolate square||2 Ounce (2 Squares)|
|Vanilla extract||1 Teaspoon|
|Lemon flavoring||1 Teaspoon|
Cream butter and sugar together.
Sift flour with baking soda and salt; add to first mixture alternately with 1/2 cup milk.
Add beaten eggs.
Melt chocolate with remaining 1/2 cup milk over low heat; cool.
Add to batter and stir in flavorings.
Pour into greased 2 1/2-inch muffin pans, filling cups about two thirds full.
Bake in preheated moderate oven (350°F.) for 25 minutes, or until cakes test done.
Makes about 24.
