Chunky Chocolate Cupcakes
|Sifted flour||1 Cup (16 tbs)|
|Sugar||1 Cup (16 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Cooking oil||1⁄4 Cup (4 tbs)|
|Milk||1⁄4 Cup (4 tbs)|
|Unsweetened chocolate||1 1⁄2 Ounce, chopped|
|Creamy orange frosting||1 Cup (16 tbs)|
Sift together flour, sugar, baking powder and salt into bowl.
Combine eggs, oil, vanilla, and milk in small bowl.
Combine egg mixture with dry ingredients; beat until blended.
Stir in chocolate.
Spoon batter into paper-lined 2-1/2-inch muffin-pan cups, filling two-thirds full.
Bake in 400 degree oven 20-25 minutes or until cupcakes test done.
Remove from pans, and cool on racks.
Frost with Creamy Orange Frosting.
Creamy Orange Frosting: Combine 2-1/2 cups sifted confectioners' sugar, 3 tablespoons soft butter or margarine, 1 teaspoon grated orange rind, and 2 tablespoons orange juice.
Beat until smooth.
