Happy Day Cupcakes
|Shortening||1⁄4 Cup (4 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|All purpose flour||18 Tablespoon (1 Cup Plus 2 Tablespoons)|
|Baking powder||1 1⁄4 Teaspoon|
|Milk||9 Tablespoon (1/2 Cup Plus 1 Tablespoon)|
|Vanilla extract||1⁄2 Teaspoon|
|Butter frosting||150 Gram|
1.Take the pineapple can, strain the fruit and keep aside 1/2 cup liquid.
2.In a medium sized saucepan, mix pineapple liquid, sugar and cornstarch and allow them to cook on medium flame by stirring continuously.
3.Once a thick consistency of mixture is achieved, put butter, pineapple, and ginger in the pan and stir occasionally.
4.In a small saucepan, put brandy on medium flame and heat it without a boil.
5.Blaze the brandy in the pan with a match and put it on the pineaplle sauce.
6.Use the sauce for topping on icecream and garnish it with coconut.
