Chocolate Macaroon Cupcakes
|Coconut||1⁄3 Cup (5.33 tbs), flaked|
|Chocolate cake mix||1 (1-layer-size)|
In a small bowl beat egg white and vanilla till soft peaks form (tips curl).
Gradually add sugar, beating till stiff peaks form (tips stand straight).
Fold in coconut.
Prepare cake mix according to package directions.
Line 12 muffin cups with paper bake cups.
Fill about 2/3 full with batter.
Drop about 1 rounded tablespoon of coconut mixture onto batter in each muffin cup.
Bake in a 350° oven about 20 minutes or till done.
