Carob Cupcakes

Ingredients
  Egg 1
  Carob powder 1⁄2 Cup (8 tbs), sifted
  Softened butter 1⁄2 Cup (8 tbs)
  Whole wheat pastry flour 1 1⁄2 Cup (24 tbs)
  Sour cream/Yogurt/buttermilk 1⁄2 Cup (8 tbs)
  Soda 1 Teaspoon
  Warmed honey 1⁄2 Cup (8 tbs)
  Hot water 1⁄2 Cup (8 tbs)
Directions

Preheat oven to 375° F.and grease 12 muffin tins.
Put ingredients into bowl in order given.
Do not mix until last item has been added, then beat well.
Fill muffin tins two-thirds full and bake in preheated oven for 20 to 25 minutes.
If desired, frost with PEANUT BUTTER ICING or WHITE FROSTING
