NOT your average cupcakes- these aren't "Hot" as in boiling hot- nor a "hot chocolate" as in the drink- but a "hot chocolate cupcake" as in a chili spiked chocolate cupcake topped with fluffy chili-chocolate frosting. These are great for April Fool's day- trick someone into eating an unorthodox chocolate cupcake...

Unsweetened cocoa powder | 1/2 Cup (8 tbs) | |
All purpose flour | 1 1/3 Cup (21.33 tbs) | |
Baking powder | 2 Teaspoon | |
Salt | 1/4 Teaspoon | |
Cayenne pepper | 1 Teaspoon | |
Ground cinnamon | 1/8 Teaspoon | |
Unsalted butter | 1/2 Cup (8 tbs) , softened | |
Granulated sugar | 1 Cup (16 tbs) | |
Eggs | 2 | |
Vanilla extract | 2 Teaspoon | |
For the frosting: | ||
Butter | 1/4 Cup (4 tbs) , melted | |
Cocoa powder | 1/3 Cup (5.33 tbs) | |
Powdered sugar | 1 1/2 Cup (24 tbs) | |
Milk/Heavy cream | 2 1/2 Tablespoon | |
Vanilla extract | 1/2 Teaspoon (optional) | |
Cayenne pepper | 1/4 Teaspoon (optional) | |
Chili flakes | To Taste |
GETTING READY:
Preheat oven to 375°F/ 180°C.
Line muffin tray with cupcake liners.
MAKING:
In a small bowl, combine water and cocoa until smooth.
In another bowl, combine flour, baking powder, salt, cayenne pepper, cinnamon and mix well.
In another bowl, combine butter, sugar and whisk until light and fluffy. Add eggs, vanilla extract and mix well.
Gradually add flour mixture, cocoa mixture and stir until combined.
Spoon into paper liners using ice cream scoop and pop into oven.
Bake for 16-18 minutes and once done, allow to cool completely.
For frosting, whisk cocoa and butter. Add cayenne pepper, powdered sugar, milk, vanilla and beat until light and fluffy.
Spread over cupcakes using piping bag and garnish with chili flakes.
