Creole Chicken Jambalaya One Pot Meal Easy Weeknight Dinner

If i could do a one pot meal every weeknight, I definitely would. Not only is this a total time saver but it packs some serious flavor.

Ingredients

Chicken 1 Pound
Onion 1
Sweet bell pepper 3
Celery stalks 3
Fire roasted tomatoes 14 Ounce
Bay leaves 4
Garlic cloves 5
Worcestershire sauce 1 Tablespoon
Brown rice 1 1/2 Cup (24 tbs)
Cayenne 1 Teaspoon
Paprika 1 Teaspoon
Oregano 1 Teaspoon
Salt and pepper To Taste
Fresh parsley 1 Tablespoon

Directions

MAKING

1- Sautée your onions, peppers, celery and garlic in a splash of olive oil.

2- Add chicken and cook through. Add your Cajun blend and cook for another minute.

3- Add broth, tomatoes, Worcestershire, bay leaves and rice. Bring to a simmer. Cover and cook minimum of 40 mins. Keep coming back to stir so your rice doesnt stick.

SERVING

4- Garnish it up with a bit of fresh parsley and enjoy!
