Chilled Cucumber Ring Salad
|Cold water||1⁄2 Cup (8 tbs)|
|Cucumber||1 Large, pared|
|Cottage cheese||3 Cup (48 tbs), creamed|
|Cream cheese||1 , softened|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Celery||2⁄3 Cup (10.67 tbs), chopped|
|Nuts||1⁄3 Cup (5.33 tbs)|
Soften gelatin in water; add salt; heat and stir over low heat until gelatin is dissolved.
Cut cucumber in half and remove seeds; grate cucumber with onion and set aside.
Beat the cheeses, and stir in gelatin.
Add remaining ingredients.
Pour into a 1 quart ring mold and chill overnight.
