Cucumber With Country Ham is simply very tasty. The Lemon juice gives the Cucumber With Country Ham a sharp and refreshing taste.
  Cucumber 1 , peeled and diced
  Scallions 8 , peeled (spring onions)
  Butter 1 Tablespoon
  White wine/Lemon juice 3 Tablespoon
  Salt To Taste
  Pepper To Taste
  Country ham 7 Ounce (Virginia)
  Sour cream 3 Tablespoon (creme fraiche)
  Chopped fresh parsley 1 Tablespoon
  Cayenne pepper 1
  Grated gruyere cheese 1⁄2 Cup (8 tbs)

Put the cucumber and scallions (spring onions) in a dish with the butter and the lemon juice or white wine.
Season with salt and pepper.
Cover and microwave on HIGH for 8 minutes.
Cut the Virginia (country) ham into large cubes.
Mix together the sour cream (creme fraiche), chopped parsley and a pinch of cayenne pepper.
Add the ham and the sour cream (creme fraiche) mixture to the cucumber, stir well and sprinkle with the Gruyere cheese.
Cover and microwave on HIGH for 1 1/2 minutes.
