Cucumber With Country Ham
|Cucumber||1 , peeled and diced|
|Scallions||8 , peeled (spring onions)|
|White wine/Lemon juice||3 Tablespoon|
|Country ham||7 Ounce (Virginia)|
|Sour cream||3 Tablespoon (creme fraiche)|
|Chopped fresh parsley||1 Tablespoon|
|Grated gruyere cheese||1⁄2 Cup (8 tbs)|
Put the cucumber and scallions (spring onions) in a dish with the butter and the lemon juice or white wine.
Season with salt and pepper.
Cover and microwave on HIGH for 8 minutes.
Cut the Virginia (country) ham into large cubes.
Mix together the sour cream (creme fraiche), chopped parsley and a pinch of cayenne pepper.
Add the ham and the sour cream (creme fraiche) mixture to the cucumber, stir well and sprinkle with the Gruyere cheese.
Cover and microwave on HIGH for 1 1/2 minutes.
