Cucumber Grapefruit Aspic
|Unflavored gelatin||1 1⁄2 Tablespoon|
|Cold water||1⁄4 Cup (4 tbs)|
|Boiling water||1⁄2 Cup (8 tbs)|
|Grapefruit juice||1 1⁄2 Cup (24 tbs)|
|Lemon juice||2 Tablespoon|
|Canned grapefruit sections||1 Cup (16 tbs), coarsely cut|
|Cucumber||1 Cup (16 tbs), seeded and finely chopped|
Soften gelatin in cold water.
Dissolve in hot water.
Add grapefruit juice, lemon juice, sugar and salt.
Chill until mixture begins to thicken.
Fold in grapefruit sections and cucumber.
Pour into fruit design mold and chill until firm.
Serve with sour cream mayonnaise dressing.
