Cucumber Grapefruit Aspic

The cucumber grapefruit aspic is a gelatin based grapefruit and cucumber aspic. Flavored with lemon juice and grapefruit juice, this sweet and savory aspic is one of my favorite for the summer. Served with sour cream and amyo, this cucumber and grapefruit aspic is light and fresh to taste.
Ingredients
  Unflavored gelatin 1 1⁄2 Tablespoon
  Cold water 1⁄4 Cup (4 tbs)
  Boiling water 1⁄2 Cup (8 tbs)
  Grapefruit juice 1 1⁄2 Cup (24 tbs)
  Lemon juice 2 Tablespoon
  Sugar 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Canned grapefruit sections 1 Cup (16 tbs), coarsely cut
  Cucumber 1 Cup (16 tbs), seeded and finely chopped
Directions

Soften gelatin in cold water.
Dissolve in hot water.
Add grapefruit juice, lemon juice, sugar and salt.
Chill until mixture begins to thicken.
Fold in grapefruit sections and cucumber.
Pour into fruit design mold and chill until firm.
Serve with sour cream mayonnaise dressing.
