Pickled Cucumber Slices

Ingredients
  Cucumbers 2 Medium
  Rice vinegar/White vinegar 1⁄4 Cup (4 tbs)
  Lime juice 3 Tablespoon
  Sugar 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Red chili pepper/1/4 teaspoon crushed red pepper 1 , seeded and sliced
  Finely chopped red onion 1⁄4 Cup (4 tbs)
  Lettuce leaves 6
Directions

Score cucumbers lengthwise; cut cross wise into 1/8 inch thick slices.
In a small saucepan combine the vinegar, lime juice, sugar, salt, and red pepper.
Bring to boiling; reduce heat.
Simmer for 2 minutes.
Remove from heat.
Pour over cucumber slices and toss to coat.
Cover and chill till serving time.
Before serving, stir in red onion, if desired.
Using a slotted spoon, transfer the cucumber mixture to a lettuce lined plate.
