Exquisite Cucumber Mold
|Unflavored gelatin||2 Tablespoon (2 Envelopes)|
|Cold water||1⁄2 Cup (8 tbs)|
|Mayonnaise||1 1⁄2 Cup (24 tbs)|
|Prepared horseradish||2 1⁄2 Tablespoon|
|Grated onion||2 Tablespoon|
|Green food coloring||15 Drop|
|White pepper||1⁄4 Teaspoon|
|Heavy cream||1 Cup (16 tbs), whipped (Chilled)|
Rinse cucumbers, pare, cut lengthwise into halves, and discard seeds.
Cut cucumbers into pieces.
Finely grind enough cucumbers in an electric blender to make 3 cups pulp.
Sprinkle gelatin evenly over cold water in a small saucepan; stir over low heat until completely dissolved.
Measure mayonnaise into a large bowl and mix in cucumber pulp, horseradish, onion, food coloring, and a blend of salt and white pepper.
Add the dissolved gelatin gradually, stirring constantly until thoroughly blended.
Chill until mixture is slightly thickened.
Fold in whipped cream and turn into a 2-quart fancy mold.
Chill until firm, about 6 hours.
