Cucumber Relish Mold
|Lime gelatin||3 Ounce|
Prepare gelatin as directed on package except decrease water to 1 1/2 cups and chill until slightly thickened but not set.
Cut unpared cucumber lengthwise into quarters, then into 1/2 inch lengths.
Cut celery and onions into 1 1/2 inch lengths.
Place vegetables in blender; add water to cover.
Chop, watching carefully.
(Or vegetables can be finely chopped by hand.
Be sure to drain cucumber thoroughly.) Stir vegetables and salt into gelatin.
Pour into 4 cup mold or 6 individual molds.
Chill until firm, at least 6 hours.
For a festive touch, unmold on salad greens.
A sour cream salad dressing offers an interesting contrast.
