Creamy Cucumber Mold
|Lime flavored gelatin||3 Ounce|
|Boiling water||1 Cup (16 tbs)|
|Mayonnaise||1 Cup (16 tbs)|
|Commercial sour cream||1⁄2 Cup (8 tbs)|
|Chopped cucumber||1 Cup (16 tbs)|
|Chopped pimiento||3 Tablespoon|
|Minced onion||1 Tablespoon|
Dissolve gelatin in boiling water; stir in salt.
Combine mayonnaise and sour cream; stir into gelatin mixture.
Chill until consistency of unbeaten egg white.
Fold cucumber, pimiento, and onion into gelatin.
Pour into a lightly oiled 4-cup mold.
Chill until firm.
Unmold on serving platter; garnish with cucumber slices, if desired.
