Refreshing Cucumber and Yogurt Salad
|Cucumbers||4 , peeled or unpeeled, sliced|
|Plain yogurt/Low fat yogurt||2 Cup (32 tbs)|
|Chopped fresh mint||4 Tablespoon|
|Freshly ground pepper||To Taste|
|Mint leaves||1 Tablespoon|
1) Stack the slices of cucumber and cut down each stack twice. Divide the slices into four quarters.
2) Toss the cucumber with the yogurt.
3) Add the mint, if using, and season with salt and pepper to taste.
4) Transfer the salad to a serving bowl, garnish with mint leaves and serve while still fresh and crunchy. Makes a good appetizer as well as side dish.
