Pear Cucumber Aspic
|Lime flavored gelatin||1 Tablespoon|
|Hot water||1 Cup (16 tbs)|
|Pear juice and water||1 Cup (16 tbs)|
|Cucumber||3⁄4 Cup (12 tbs), diced|
|Diced canned pears||3⁄4 Cup (12 tbs)|
Dissolve gelatin in hot water.
Add pear juice and water and vinegar.
Chill until slightly thickened.
Season cucumber with salt; add pears.
Fold into gelatin.
Turn into ring mold.
Chill until firm.
Garnish with sliced cucumber and crisp lettuce.
Fill center with cottage cheese.
