Ripe Cucumber Relish

Ingredients
  Onions 8 Medium, cut up
  Sweet red peppers To Taste, cut up and deseeded
  Green pepper 1 Large, cut up and deseeded
  Pickling salt 2 Tablespoon
  Cucumber 8 Medium, peeled and diced
For dressing
  White vinegar 3⁄4 Cup (12 tbs)
  White sugar 2 Cup (32 tbs)
  Cornstarch 2 Tablespoon
  Mustard 2 Tablespoon
  Turmeric 1 Teaspoon
Directions

GETTING READY
1) In a food processor, place together onions and peppers.
2) Process until finely chopped.
3) In a bowl, remove the onion mixture and mix in pickling salt.
4) Cover and place the onion mixture in the refrigerator overnight.

MAKING
5) In a saucepan, pour the onion mixture and boil for 5 minutes.
6) Remove from heat and cool slightly.
7) Stir in the cucumbers.
8) Spoon the apple mixture into a sterilized jar.
9) In a saucepan, mix together vinegar, sugar, cornstarch, mustard and turmeric.
10) Heat the vinegar mixture to a boil.
11) Reduce the heat and simmer until thickened, stirring constantly.

FINALIZING
12) Pour the vinegar mixture over the vegetables.
13) Stir a small spoon in the jar, to escape the trapped air bubbles if any.
14) Allow the mixture to cool down and seal with sterilized lids.
15) Place the jar in refrigerator.

SERVING
16) Serve as desired.
