Sweetly Sour Cucumber

Ingredients
  Cucumbers 2
  Salt 1 Teaspoon
  Onion 1 Medium, peeled and thinly sliced in rings
  Tarragon wine vinegar 1⁄4 Cup (4 tbs)
  Sweetened rhubarb sauce 1⁄4 Cup (4 tbs)
  Tomato slice 6 , thick
  Minced parsley 3 Tablespoon
Directions

Peel cucumbers, run the tines of a fork down the sides all around (for a scalloped effect), and slice very thin.
Salt them and let stand for a few minutes, stirring occasionally.
Then drain and add onion.
Mix vinegar and rhubarb together and pour over cucumber-onion mixture; chill.
Serve on tomato slices; sprinkle with parsley.
