Sweetly Sour Cucumber
|Onion||1 Medium, peeled and thinly sliced in rings|
|Tarragon wine vinegar||1⁄4 Cup (4 tbs)|
|Sweetened rhubarb sauce||1⁄4 Cup (4 tbs)|
|Tomato slice||6 , thick|
|Minced parsley||3 Tablespoon|
Peel cucumbers, run the tines of a fork down the sides all around (for a scalloped effect), and slice very thin.
Salt them and let stand for a few minutes, stirring occasionally.
Then drain and add onion.
Mix vinegar and rhubarb together and pour over cucumber-onion mixture; chill.
Serve on tomato slices; sprinkle with parsley.
