Fish With Cucumber And Capers
|Fish fillets||1 Pound, frozen, thawed (1 Package, 500 Grams, Haddock, Cod, Boston Bluefish)|
|Lemon juice||1 Tablespoon|
|Cucumber||1 Cup (16 tbs), thinly sliced peeled|
|Onion||1 Tablespoon, minced|
|Capers||1 Tablespoon, chopped|
|Fresh dill||1 Tablespoon, chopped|
|Lemon rind||1⁄2 Teaspoon, grated|
|Lemon, rind||1⁄2 Teaspoon, grated|
1. To prepare the fish cut block of fish fillets into 4 equal pieces and on a pie plate arrange like spokes in a wheel.
2. Sprinkle fish with lemon juice, then with cucumber, onion, capers, dill and lemon rind and covering with waxed paper microwave at High for 5 to 7 minutes or until fish is opaque, rotating plate twice.
3. Seasoning with salt and pepper to taste, let it stand, covered, for 5 minutes and serve.
