Cucumber And Yogurt Delight

Ingredients
  Lemon juice 1 Teaspoon
  Crushed mint leaves 2 Tablespoon, dried
  Parsley 3 Tablespoon, chopped
  Garlic clove 1 Small, crushed
  Plain low-fat yogurt 2 Cup (32 tbs)
  Cucumbers 2 Medium, sliced or chopped
  Fresh mint leaves 4
Directions

MAKING
1 In a bowl, combine lemon juice, mint, parsley, garlic, and yogurt. Blend well.
2 Gradually stir in cucumber.
3 Refrigerate at least for one hour.
4 Use fresh mint for garnishing.
SERVING
5 Serve chilled.
