|Cucumbers||1 Cup (16 tbs)|
|Rice||1 Cup (16 tbs)|
|Cheese||1 Cup (16 tbs)|
|Oil||1 Cup (16 tbs)|
Peel the cucumbers and slice into 1/2 inch rounds.
Heat the butter and oil in thick pan and fry the cucumber rounds very gently, until tender.
Remove and keep warm.
Toss into the rice and stir until the rice has absorbed all the butter and oil.
Place the rice and cucumbers together on an oven dish and sprinkle generously with grated cheese.
Place under hot grill until lightly browned.
