Cucumber And Grapefruit Mold

Ingredients
  Canned grapefruit sections 1 Pound
  Plain gelatin 1 Tablespoon (1 Envelope)
  Sugar 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Vinegar 1 Tablespoon
  Green vegetable coloring 1 Teaspoon
  Diced peeled cucumber 1 Cup (16 tbs)
Directions

1.
Drain the syrup from the grapefruit sections and add enough water to make 1 3/4 cups liquid.

Mix this liquid with the gelatin, sugar, and salt, and stir over low heat until the gelatin is dissolved.

Stir in the vinegar and a little green food coloring.
Chill to the consistency of unbeaten egg whites.

Fold in the cucumber and grapefruit, pour into a ring mold rinsed out in cold water, and chill until firm.
Unmold on a chilled platter and serve with mayonnaise.
