Curried Onions and Cucumber
|Water||1 1⁄2 Cup (24 tbs), divided|
|Onions||3 Large, cut into eighths|
|Cucumber||1 Large, peeled and chopped|
|Nonfat dry milk powder||1⁄4 Cup (4 tbs)|
|All purpose flour||3 Tablespoon|
|Curry powder||1 Teaspoon|
|Corn oil margarine||1 Tablespoon|
In a saucepan bring 1 cup water to a boil over high heat.
Add onions and cucumber; reduce heat and cover.
Simmer for 5 minutes.
In a small bowl combine dry milk powder, flour and curry powder.
Stir in 1/2 cup water gradually, blending well.
Into the onion mixture stir flour mixture gradually.
Cook until thickened, stirring constantly.
Add margarine, salt and pepper.
