1. Wash and pare the cucumber. Use an apple corer to remove the center and seeds, cutting through the cucumber lengthwise.
2. Mix the lemon juice with cheese, work in the chives, add salt and pepper. (Add 1/2 teaspoon of sugar if you like.)
3. Stuff the cucumber, wrap in waxed paper. Chill 2 hours or more.
4. To serve, slice in 1/8-inch slices. Serve 1 or 2 slices as a garnish for other vegetable salads; or to garnish fish; or serve on lettuce leaves with French Dressing
