Cucumber Pork

Ingredients
  Vegetable oil 3 Tablespoon
  Garlic 1 Clove (5 gm), peeled and minced
  Crushed dried red pepper 1⁄4 Teaspoon
  Salt 1 Teaspoon
  Green onions 4 , trimmed and cut into 2-inch lengths
  Pork sirloin cutlets 3⁄4 Pound, cut into 1/4-inch strips
  Snow peas 16 (Fresh Or Frozen,)
  Sugar 1 Tablespoon
  Cider vinegar 1 Tablespoon
  Beef broth 2 Tablespoon
  Cucumbers 2 Medium, peeled, seeded, and cut into thin, 2-inch-long strips
Directions

1. Heat the oil in a 9- or 10-inch skillet over moderately high heat. Add the garlic, dried red pepper, and salt, and cook stirring, for 30 seconds.
2. Add the green onions, pork, and snow peas. Cook stirring, for 5 minutes, or until the pork is no longer pink.
3. Combine the sugar, vinegar, and broth, and add the mixture to the skillet along with the cucumbers. Cook tossing the ingredients, until heated through. Do not overcook or the pork will toughen. Serve with rice and Dry-Sauteed Broccoli.
