Cucumber Ring Supreme

Ingredients
  Sugar 1 Tablespoon
  Unflavored gelatin 1 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Lemon juice 2 Tablespoon
  Cucumber 1⁄2 , thinly sliced
  Sugar 2 Tablespoon
  Unflavored gelatin 1 Tablespoon (1 Envelope)
  Salt 3⁄4 Teaspoon
  Cream cheese 8 Ounce, softened (1 Package, 8 Ounce Each)
  Cucumbers 6 Medium, peeled
  Mayonnaise/Salad dressing 1 Cup (16 tbs)
  Snipped parsley 1⁄4 Cup (4 tbs)
  Finely chopped onion 3 Tablespoon
Directions

In small saucepan combine the 1 tablespoon sugar, the 1 1/2 teaspoons unflavored gelatin, and the 1/2 teaspoon salt.
Stir in 3/4 cup water; stir over low heat till gelatin and sugar are dissolved.
Stir in 2 tablespoons lemon juice.
Pour into 6 1/2-cup ring mold.
Chill till partially set.
Overlay the thinly sliced cucumber atop gelatin mixture in mold; press into gelatin.
Chill till almost firm.
Meanwhile, in saucepan mix the 2 tablespoons sugar, the 1 envelope unflavored gelatin, and the 3/4 teaspoon salt.
Add 2/3 cup water; stir over low heat till gelatin and sugar are dissolved.
Stir in 2 tablespoons lemon juice.
Gradually beat hot gelatin mixture into softened cream cheese with rotary beater till mixture is smooth.
Halve the 6 cucumbers and scrape out seeds; grind using , fine blade, or finely shred.
Measure 2 cups drained ground cucumber.
Fold ground cucumber, mayonnaise, parsley, and onion into cream cheese mixture.
Pour over almost firm gelatin in mold.
Chill till firm.
